I would follow this route but I would hold onto the engine so I could go back if I ever wanted to. A rotary just won't be practical for long term use they just have too much upkeep and for a car that is starting to get on in years it won't be a pleasant combination. There were 2 RX-7s on my campus, one has the LS engine from a corvette and the other which I think is actually owned by a professor is stock and completely clean.

RX-7 as long as it wasn't my only car. BRZ if I had to have just one and these were the only two choice. Can I pick option C and just have a 20b in a 3-series?

yeah, no reason to toss a rotary engine, I'd store mine too. Decent engine to practice rebuilding on, honestly. Not a huge loss, since lots of aftermarket companies can make them better.

Same. Although I'd regret the money spent, not the end result. I'm not a big rotary fan, but the FD RX-7 is perfection otherwise.

Exactly. The RX-7 is gorgeous, and so, so fast, but you just can't keep them on the road. The BR-Z is as close as you can get to the RX, now, but it's going to be a 15,000 mile-a-year, drive it everyday toy, and that's definitely worth my money.
